Chicken and Rice Soup
I just made a nice big pot of Home Made
Chicken and Rice Soup loaded with
lots of Veggies,
Garlic , Onions, and Homegrown Spices
for my hubby who is sick today.
Here is my Recipe
Chicken and Rice Soup
Ingredients:
4 Chicken Breasts Shredded or 1 Whole Chicken Deboned
6 Leaves Basil (or 2 Tbsp canned)
Sprig Oregano chopped (or 2 Tbsp canned)
1/2 bunch Celery
6 Large Carrots or about 1/2 bag baby carrots
1 Med Onion Yellow or white
1/4 head of cabbage or 1/2 small bag shredded cabbage
10 cloves Minced Garlic (love the healing power in Garlic)
1 Cup Rice
1 Tbsp Pepper
1 tsp Cayenne Pepper (optional) *to loosen sinuses
12. 3 Tbsp Olive Oil
Directions:
Saute Onions and Garlic in Olive Oil
Add enough water to fill sauce pot 3/4 full
Add all your spices and boil until chicken is fork tender
Once chicken is done, remove and shred Chicken
Return chicken to pot and add rice,carrots, and celery and boil for another 10 minutes.
Turn off burner and let sit till rice puffs up and soup thickens (about 10 minutes).
Serve and let cool before eating
